  • 1.25 lb pork tenderloin

  • Fresh herbs

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 132.0ºF / 55.6ºC.

  • Step 2

    Seasoned pork generously with salt and pepper in any fresh herbs such as oregano sage rosemary as well as garlic and shallots and distribute evenly in seal bag. Place in water bath for recommended time of one hour and 25 minutes at 130°

  • Step 3

    To finish turn on your vents and open your windows remove pork from water bath and bag discard aromatics from Bag reserve liquid from bag if making pan sauce carefully pat pork dry with paper towels and add oil to a heavy cast-iron skillet or stainless steel skillet place it over on a hotter grill turning occasionally until browned on most sides about two minutes total

    When pork is mostly browned add butter and reserved half garlic shallots and herbs and cook tilting Pam and using a spoon to bass pork with flavorful butter until port is well browned on all sides or brush pork on grill with melted butter transfer port to rack set an a rimmed baking sheet and pour the drippings on top allowed arrest for 1 to 2 minutes then slice and serve finished an open windows I love poured water
