Ingredients for 4

  • 1 pound russet or Yukon Gold potatoes, peeled and cuted

  • 1 tsp kosher salt

  • 1/2 cup heavy cream, or whole milk, or creme fraiche, or a mixture

  • 1/2 to 1 cup (4 to 8 oz) unsalted butter at room temperature

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 194ºF / 90.0ºC

  • Step 2

    Place the potatoes, salt, and cream in a gallon size freezer safe ziplock bag. Press down on the bag so the potatoes sit as flat as possible. When the water reaches the temperature, lower the bagged potatoes into the water and cook for 2 hours. Remove the bag from the water. Set a potato ricer or a food mill fitted with the finest die over a large bowl. Using a ladle, transfer the potato and cream mixture to the rice or milk and pass it through. Taste and adjusters the seasoning with salt if need and serve warm.
