Two 4-6 oz. Lobster Tails

Step 1
Set your Anova Sous Vide Precision Cooker to 140ºF / 60.0ºC

Step 2
Place lobster tails on cutting bored and grab some kitchen shears. Lay the tail so that the shell is on the board and the meat is facing up. With the shears, cut along each outer edge and the meat should be very easy to remove.

Place tails in their own individual sous vide bags along with 1-2 tablespoons of butter. Add very skinny slice lemon in bag if desired.

Remove air from bags using your preferred method and place in water.

Set timer for at least 20 minutes. I usually cook mine for 27 minutes, which results in very tasty and soft, lobster tail with a slight tenderness to it.

When the timer is up, remove tails from bags and throw away remaining contents.

Place tails on a plate and squeeze a fresh slice of lemon to taste.

Melt some butter for dipping and you are all set.
