Ingredients for 12

  • 6 eggs

  • 1 c cottage cheese

  • 3/4 c egg whites

  • Salt, pepper, your favorite seasonings

  • Chopped/diced vegetables (peppers, onions, mushrooms, zucchini), ham, bacon etc for sauteing

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 170.0ºF / 76.7ºC.

  • Step 2

    Divide sautéed vegetables/bacon/ham etc between 12 wide mouth 250ml jars that have been lightly sprayed with canola oil

  • Step 3

    Mix together eggs, whites, cottage cheese and seasonings with hand blender until smooth and divide (approx 1/4c) between prepared jars.

  • Step 4

    Screw on lids and cook 6 jars at a time or as many as you have room for.

      Egg bites may be frozen in jars or kept in fridge and reheated (microwave) and served on a toasted English muffin. A quick, healthy and delicious way to start your day!
