Ingredients for 1

  • 2.6 lb beef tenderloin, tied

  • Butter

  • Salt & pepper

  • Rosemary

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 139.0ºF / 59.4ºC.

  • Step 2

    Brush tenderloin with olive oil and rub generously with kosher salt and pepper.

  • Step 3

    Heat olive oil until hot and sear tenderloin on all sides, approx 30 seconds per side.

  • Step 4

    Place in vacuum seal bag, add rosemary and butter to the bag and then seal.

  • Step 5

    Place in the 139 degree water for 2h40m.

  • Step 6

    Remove from the water, cut the bag and remove meat.

  • Step 7

    Heat 3 tbs of butter in a skillet until hot, add rosemary from the bag, and then sear meat on all sides, approx 30 seconds per side to create a nice brown crust. Slice and serve!
