Ingredients for 2
Acorn squash
Salt - pepper to taste
1 Lb sausage
1/2 tsp thyme
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 194ºF / 90.0ºC

Step 2
Microwave squash for 4 minutes on high then allow squash to cool to room temp

Cut squash in half and remove seeds

Step 4
Cut each half in 1 inch wedges and vacuum bag wedges. Add salt, pepper to squash and butter to bag before sealing.

Cook at 194 degrees F or 90 degrees C for 1 hour.

In a separate pan cook 1 pound sausage. Add 1/2 tsp each salt and ground thyme to pan and brown the sausage.

Step 1
Remove skin from the cooked squash and mash the pulp add butter to taste in the pulp.

Step 2
Fill individual dishes with the squash pulp first. Then layer the browned sausage and sprinkle Parmesan cheese on top.

Step 3
Microwave to melt the cheese and warm the squash and sausage.
