  1. Set the Anova Sous Vide Precision Cooker to 145ºF (63.3ºC).
  2. Using a slotted spoon, carefully place eggs in water bath. Set the timer for 1 hour.
  3. About 15 minutes before the eggs are finished, heat the broiler to high.
  4. Wrap each asparagus spear with one strip prosciutto. Place on a broiler-safe baking sheet and drizzle with olive oil. Lightly season with salt and pepper.
  5. Broil asparagus, flipping halfway through, until prosciutto crisps and spears are tender, 8 to 12 minutes. Divide between 3 serving plates.

Finishing Steps

  1. When the timer goes off, carefully remove the eggs from the water bath. Carefully crack the shells and slide each egg out onto a plate with the asparagus.
  2. Season egg with salt and pepper. Serve.
